Baked Fish Parmesan

At Your Local Supermarket:
  • 4 (4-oz. each) salmon fillets
  • 1/4 cup light mayonnaise
  • 2 tbsp. grated Parmesan cheese
  • 1 tsp. white wine
  • dash Worcestershire sauce

Instructions

  1. Preheat oven to 450°F. Stir together mayonnaise, Parmesan cheese, 1 tablespoon of the chives and Worcestershire sauce. Spread over fish fillets.
  2. Bake uncovered for 12-15 minutes or until fish flakes easily with a fork. Garnish with additional chives.
Serves: 4
Recipe Note: Chives are available fresh, dried or frozen. Choose fresh chives that have a deep green color and sturdy leaves with no bruising. Avoid chives that are wilted. It is easy to prepared chives to use as a garnish. Simply snip the leaves into tiny pieces with scissors or cut with a knife. Always use chives raw because cooking diminishes the flavor.
