Cilantro-Tomato Appetizer

  • 2 cups cherry tomatoes
  • 2/3 cup low-fat (1% milk fat) cottage cheese
  • 2 green onions, minced
  • Dash curry powder

Instructions

  1. Cut tops off cherry tomatoes almost through, forming a lid. Scoop out the seeds and discard.
  2. Mix together cottage cheese, green onions, cilantro, parsley, basil, garlic and curry.
  3. Stuff tomatoes with cheese mixture.
Serves: 4
Recipe Note: Look for fresh, undamaged bunches with small stems. Avoid wilted or bruised leaves. Cilantro may be stored successfully by wrapping stems in damp paper towels, enclosing in plastic and storing in the refrigerator. Use within a few days. Cilantro leaves are a must for Mexican dishes - add crushed or whole at the end of cooking to unleash the musty, nutty flavor. Use in chutneys, curries, and soups. Add to rice, bean, fish and chicken dishes.
