Lamb Chops with Apple and Thyme

  • 1 tbsp. olive oil
  • 1 tbsp. chopped fresh thyme leaves
  • 2 medium tart cooking apples, cored and cut into 1-inch slices
  • 1 medium red onion, sliced 1/2 inch thick

Instructions

  1. Preheat grill to medium.
  2. Trim fat from chops. Combine olive oil, thyme and garlic. Brush on both sides of chops, apple and onion slices.
  3. Grill chops, apple and onion slices until chops are desired doneness and apples and onion are tender. (Allow 10 to 14 minutes for medium-rare and 14 to 16 minutes for medium.)
  4. Serve apple and onion rings with chops.
