Lamb Chops with Tomato Salsa

  • 1 tsbp. olive oil
  • 1/2 of a lime, juiced and zested
  • 6 medium tomatoes, peeled, seeded and chopped
  • 8 pitted green olives, finely chopped
  • 1 tsbp. lime juice
  • Dash Sugar

Instructions

  1. Place lamb chops in a shallow baking dish; sprinkle with 2 tablespoons basil. Drizzle with olive oil and lime juice and sprinkle with lime zest. Season with salt and pepper. Cover and chill for 1 hour or overnight.
  2. To make salsa, stir together tomatoes, green olives, remaining 2 tablesppons basil leaves, the 1 tablespoon lime juice and sugar. Set aside.
  3. Preheat grill to medium. Remove lamb from marinade; discard marinade. Grill chops to desired doneness (allow 10 to 14 minutes for medium-rare and 14 to 16 minutes for medium doneness), turning once halfway through grilling. Serve with tomato salsa.
