Steak and Shrimp Fajitas


Ingredients

  • 2 lb. plum tomatoes diced
  • 1/2 tsp. kosher salt
  • 1/2 ziti or penne pasta
  • 1/2 cup. diced fontina cheese (2 oz.)
  • 3 tbsp. red wine vinegar
  • 1 tbsp. olive oil

Instructions

  1. Place tomatoes in a large bowl. Mix in garlic. Toss with kosher salt and let stand 1 hour for juices to form.
  2. Cook pasta according to package directions.
  3. Add basil, cheese, vinegar, and olive oil, to tomato mixture.
  4. Toss hot pasta in the sauce. Season to taste with salt and pepper. Garnish with toasted pine nuts, if desired.
Serves: 4
Recipe Note: Basil is available in a wide variety of flavors from lemon basil to the purplish opal basil. Choose leaves that are fresh, unspotted and fragrant. Wrap leaves in slightly damp paper towels and place in plastic bag. Refrigerate.
